While some recipes are basic, others tend to be more complex, with the addition of ingredients such as almonds, poppy seeds, and saffron. Pakistani korma recipe
- ½ kg bone-in and skinless chicken
- 1 cup vegetable oil (or any oil of your preference)
- 2 to 3 teaspoons of ghee
- 8 to 10 cardamoms
- 6 to 7 cloves
- 2 tablespoons of chopped garlic
- 1 teaspoon of coriander powder
- 1 teaspoon chili powder
- A pinch of turmeric powder
- Salt to taste
- 1 teaspoon of ginger-garlic paste
- 1 cup of yogurt
- 2 sliced onions (medium-sized)
- 1 teaspoon of Garam Masala (you can find this in a supermarket)
- Chopped coriander leaves for garnishing
- A small amount of water
Start by taking a large-sized pan and place it on a high heat flame on the stove. Add the vegetable oil and ghee and let it heat up for a few minutes.
Add in the sliced onions and fry them until they turn golden-brown. Make sure the onions are fried until they become crispy.
Add in the chopped garlic, cloves, and cardamom. Let the mixture simmer for a few minutes until everything is mixed up properly.
Now add in the chicken pieces and let them cook on high heat for at least 2 to 3 minutes.
Make sure you keep stirring till the chicken changes its color to light or golden brown.
As soon as the chicken changes color, drop in the coriander and chili powder and mix everything up properly.
Add salt to taste. It is recommended to keep the salt level medium in order to get the right taste for your Chicken Korma.
Next up, add the ginger-garlic paste followed by some yogurt. The yogurt will give your gravy the desired consistency level.
Give everything a good stir and let it cook for about two minutes.
