Ingredients:

  • 1 Boxed Halal turkey (10-12 lbs)
  • 1/4 cup olive oil or melted butter
  • 2 teaspoons salt (or to taste)
  • 1 teaspoon black pepper (or to taste)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon paprika
  • 1/2 cup chicken or turkey broth (optional, for basting)
  • 1 lemon, quartered
  • 1 onion, quartered
  • Fresh rosemary or thyme (optional, for stuffing the cavity)

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (165°C).

  2. Prepare the turkey: Remove the giblets and pat the turkey dry with paper towels. If you prefer, you can tuck the wings under the bird to keep them from burning.

  3. Season the turkey: Rub the entire turkey with olive oil or melted butter. Sprinkle generously with salt, pepper, garlic powder, onion powder, thyme, rosemary, and paprika. Be sure to rub some of the seasoning inside the turkey cavity as well.

  4. Stuff the cavity: Place the quartered lemon, onion, and some fresh herbs (rosemary or thyme) inside the turkey cavity for added flavor.

  5. Roast the turkey: Place the turkey breast-side up on a roasting rack in a large roasting pan. If you prefer, you can also add a little chicken or turkey broth to the bottom of the pan to keep the turkey moist.

  6. Cooking time: Roast the turkey for about 13 minutes per pound. For a 10-12 lb turkey, this will take around 2 to 2.5 hours. Use a meat thermometer to check the internal temperature—when it reaches 165°F (75°C) in the thickest part of the thigh, it’s ready.

  7. Baste the turkey: Every 45 minutes, baste the turkey with its own juices (or with more melted butter or broth if you like it extra moist). This step helps create a golden, crispy skin.

  8. Rest the turkey: Once the turkey is done, remove it from the oven and let it rest for 20-30 minutes before carving. This allows the juices to redistribute and keeps the meat tender.

  9. Serve and enjoy: Carve the turkey and serve with your favorite Thanksgiving sides!
